Eggplant with apples

Ingredients

  1. Eggplant 1 kg
  2. Tomatoes 1 kilogram
  3. Bulgarian pepper 400 grams
  4. Apples 300 grams
  5. Onion 500 grams
  6. Vegetable oil 200 milliliters
  7. Salt 1-2 tablespoons
  8. Sugar 1 teaspoon
  9. Pepper to taste

Cooking:

Step 1: prepare vegetables and apples.


Cut eggplant, salt and leave on 30 minutes. Rinse with running water and dry.
Cut apples, tomatoes, peppers and onions into small cups.

Step 2: stew the vegetables.


In a thick-walled pan, heat the oil and fry the onion in it until soft.

Add tomatoes to the onion, cover and leave on 10 minutes.

Then put the eggplant in the pan.

Add pepper.

And apples too.

Salt, pepper, cover and leave another on 3 minutes.
Place eggplant with apples in jars and sterilize in a pot of boiling water for 15-20 minutes (small jars) and 25-30 minutes (for jars of 800 milliliters). Tighten the covers tightly immediately after bolting.
Wrap the jars with blanks blanket and wait until they cool to room temperature.

Step 3: serve eggplant with apples.


Serve aubergines with apples cold as a snack or add to dishes. Delicious!
