Dry the meat with paper towels. We cut into slices about 1 cm thick. I have a spatula, you can take a chop or a tenderloin. We will recapture each piece, covering it with a film so that splashes do not fly. Salt and pepper, cover with foil and put in the refrigerator while preparing the filling.
For the filling, finely chop the onion, half the pepper, part of the herbs, garlic. Salt and mix. You can add adjika, hops-suneli, uzo-suneli to the filling
For each piece of meat we spread the filling, about 1 tablespoon, and turn it into a roll. While the pan is warming up, remove the rolls in the freezer.
We chop the remaining pepper larger, rub the carrots, mix well.
Pour vegetable oil and half the butter into the pan. Spread the seams down rolls. On each roll lay out pieces of the remaining butter and vegetable mixture. Cover and simmer for a minimum heat of 25-30 minutes.
Rub the tomato on a grater, discard the skin. Pour the tomato puree into the pan, close the lid and simmer another 10-15 minutes.
Rolls are ready.
