Easter cake without oil and fat


  1. flour 900 g
  2. milk 200 ml
  3. sugar 400 gr.
  4. yeast 50 g
  5. cream 33% 400 g
  6. eggs 10 pcs.
  7. warm water 2 tbsp

First of all, we grow yeast in warm water and add a couple of tablespoons of milk. Set them aside for about 15 minutes.

We mix milk and cream in a saucepan and put them on the stove. As soon as it boils, remove from the stove and gradually stir in two glasses of flour. Leave to cool completely.

While the dough is cooling, beat two eggs. Add eggs and yeast to the cooled dough. We mix everything very well.

We cover the bowl with the dough with a napkin and send it to a warm place, for fermentation.

In two different containers, we separate the yolks from the proteins. We evenly divide the sugar into these containers and beat the yolks and then the whites until the sugar dissolves.

After 30 minutes, the dough rose very well. Gradually introduce the yolks first, and then the squirrels. Mix everything well. Then we gradually introduce the flour without stopping interfering from the bottom up. We cover the finished dough with a napkin and leave it warm again for about 1-1.5 hours.

This is how the dough rose in 1 hour and 20 minutes. It needs to be mixed again.

Lubricate the forms (I have paper ones) with vegetable oil over the entire inner surface. Put the dough in them a little less than half. Leave on the proofer for another 30 minutes.

Preheat the oven to 180 degrees and send cakes there. We bake for 10 minutes at this temperature, then lower it to 150 degrees and bake for another 50 minutes.

We cover still hot cakes with glaze and confectionery powder. Leave to cool completely. Enjoy your meal.
