Vegetable zucchini soup

Ingredients

  1. Zucchini young 2 pcs.
  2. 3 carrots
  3. String beans 200 gr
  4. Onion 2 pcs.
  5. Potato 3-4 pcs.
  6. Broth (vegetable or chicken) 350-400 gr
  7. Greens for serving
  8. Salt to taste
  9. Pepper to taste
  10. Vegetable oil optional

Cooking:

Step 1: chop the vegetables.


Zucchini and potatoes cut into medium-sized cubes. Cut green beans into short pieces. Chop the carrots in circles and onions in small cubes.

Step 2: stew the vegetables.


Put potatoes, onions, carrots and beans in a pan, add some butter and simmer over low heat. 20-25 minutes under the cover. Do not forget to check. And if it turns out that the vegetables gave out a little juice, add a little water.

Step 3: add the broth.


Add zucchini, pour in the broth, salt, pepper to taste and bring to a boil over medium heat. Cook soup 20 minutes.

Step 4: serve vegetable soup from zucchini.


Season vegetable zucchini soup with fresh herbs and serve hot.
