- Yeast (fresh) 50 gr.

Step 1: prepare the dough.
Sift flour into a large plate, mix salt with eggs, add them to the flour. Combine sugar, yeast and a little warm water. Then pour it into the dough and gradually add the remaining warm water until a uniform elastic dough is obtained. At the very end, add the butter and cover the dough. Leave it to approach in a warm place for a couple of hours.
Step 2: stuff the tortillas.
Grate cheese and mix with salt and finely chopped herbs.
Divide the dough into 12 equal parts, roll a ball from each part and leave it on the board for a while, let it rise again a little.
Then roll each ball into a cake, put the cheese filling in the middle, close it from above, connecting the edges. Roll the tortilla with your hands to distribute the filling inside.
Step 3: Fry the tortillas with cheese and herbs.
On a hot skillet with thick walls, place the cake with the seam down. Fry over low heat under the lid until brown, when the bottom is brown, turn the tortilla first on a flat plate, and then return it to the pan with the unroasted side down.
The cake is ready when it becomes toasted on both sides.
Step 4: serve tortillas with cheese and herbs.
If desired, prepared cakes with cheese and herbs can be greased with butter. Serve them both hot and after cooling.
