Step 1: prepare the ingredients.
Peel and cut the carrots, celery root and parsley into medium-sized pieces.
Rinse and dry the duck breast.
Step 2: fry the duck.
Cross the skin on the chicken breasts crosswise.
Place the breasts skin-down on a cold frying pan and heat gradually. Duck fat will be drowned out of the skin and fry the breasts in it until golden brown on both sides.
When enough fat is melted, the fire can be made strong, because our task at this stage is to achieve a crust, not to cook meat. Turn the duck breasts over several times.
Step 3: cook everything in a pressure cooker.
Cut the apples into quarters, cut the seeds. Pour the duck fat remaining after frying to the bottom of the pressure cooker. Put half the vegetables and apples.
Lay out the duck breasts, sprinkling them with salt, pepper and marjoram. Put the remaining vegetables and apple slices on top. Pour about 1/2 cup of water.
Close the pressure cooker and cook 40 minutes (from the moment the steam boiler starts to let off steam).
Step 4: serve the duck with apples.
Cut the prepared duck breasts and serve with vegetables. The bird turns out very tasty!
